Knife is sharpened to a razor edge. This service is done on a 2" x 72" Burr King and finished on a Baldor buffer using a leather wheel. Blades are kept cool so overheating is not an issue. The illustrated Forschner Knife is the Forschner Boning Knife that features a 6" wide, stiff, straight granton edge blade made of high carbon stainless steel. The blade of this Forschner knife has the Victorinox logo etch. The handle is made from black Fibrox, and has been approved by the National Sanitation Foundation.

Victorinox kitchen knives feature high-carbon stainless steel blades which are hand finished by Victorinox in Switzerland. A special tempering process produces an edge that can be resharpened again and again. All Victorinox handles are ergonomically designed to minimize wrist tension.

I have used Forschner since linework @ Farmland Foods many years ago and will always like the handles, edge, edge holding, and rework ease these knives provide. So STILL using Forschner...
