The Shun Classic Kitchen Knives have Damascus style blades made of 33 layer stainless steel. The Damascus style blade profile reduces sticking, resulting in less damage to the food being prepared and faster preparation times.
The blade steel is fabricated from a core of VG-10 steel, hardened to 60 Rockwell, and composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon and Vanadium. The VG-10 core is clad with 16 layers of SUS410 stainless steel on each side, resulting in 33 layers of rust free Damascus style steel. The finished forged product has been designated Cobalt M.V. steel.
The Shun Classic Knives have ergonomic D shaped ebony black PakkaWood handles that offer maximum comfort and control. The handles have unique offset stainless steel bolsters and stainless steel end caps. The PakkaWood material provides strength, stability and moisture resistance. PakkaWood is manufactured by impregnating hardwood veneers with phenolic thermosetting resins, and fusing them into a solid wood grained structure for premium applications. The Shun Classic Knives have been approved by the National Sanitation Foundation.
