The illustrated Old Hickory Knife is the Old Hickory Slicing Knife that features an 8" blade made of carbon steel. This Slicing Knife has full tang construction with brass riveted hardwood handle scales. The Old Hickory Slicing Knife has an overall length of 12 3/4". Made in the USA.

Caution, high carbon steel will rust if not properly cared for. Clean and oil after use, and keep out of the dishwasher.

I’ve been looking for these and finally found them. They hold their edge remaing sharp for long periods. I haven’t hat to sharpen them but I sure it will be easy just as with my older carbon steel knives. I highly recommend these for those who do a lot of cutting in the kitchen. Great product. old hickey are great knifes. used them in the 60's when I was a butcher. only thing missing is you need to put a good factory edge on them or at least put a good beveled edge.

I like the knives very much but would like to know how to keep the handles from getting dry. I am not putting is dishwasher, I am washing the blades by hand.

Nice slicer for roast meat. Put time and effort into sharpening it. Darkened by soaking in white vinegar 2 hours. Coated steel and wood with olive oil.
