I am an avid hunter and I have used and counted on Old Hickory knives for more than 50 years. The QN-417 Fillet Knife is my go to knife when butchering large quantities of venison and feral hog. I normally sharpen all of my knives before I use them, and an 18-20 degree pitch is perfect for these thin blades.

After the initial sharpening, they keep an excellent edge through more work than any other inexpensive knife I own, and a few swipes with a steel will keep them sharp.

Over the years I have lost a couple and given a few to friends who really needed a better knife, so I ordered 4 more last week. They shipped quickly - I had them in 4 days! - and they are sharp and ready for deer season.

Don't get me wrong on the sharpening thing, though. The steel is excellent and they can be used right out of the box, but at about $15 each, you can't expect a perfect edge when you get them. That steel is, however, good enough to compete with any knife when properly sharpened! Love them!

These are the knives I have been waiting for. I have used the Old Hickory paring knife that belonged to my mother in law for many years and the knife is wellover 100 years old. These knives are sharp, easy to clean, and are an asset to my kitchen. My daughter's may each be getting a set in the near future.
