Forschner Knives: Forschner Chef's Knife 7" wavy blade, FO-40720
The illustrated Forschner Chef's Knife features a 7" stainless steel wavy blade attached to a 5 1/4" black fibrox handle. Fibrox is a tough, durable synthetic that has been approved by the National Sanitation Foundation. The overall length of the knife is 12 1/4" and weighs 4 ounces.
Forschner kitchen knives feature high-carbon stainless steel blades which are hand finished by Victorinox in Switzerland. A special tempering process produces an edge that can be resharpened again and again. All Victorinox handles are ergonomically designed to minimize wrist tension.
Wavy edges are especially useful for cutting soft products with a hard crust (bread) or tough skin (sausage, tomatoes). The teeth of a wavy edge allow greater pressure to be exerted on the object being cut and are generally thinner than a plain edge blade.
