Knife is sharpened to a razor edge. This service is done on a 2" x 72" Burr King and finished on a Baldor buffer using a leather wheel. Blades are kept cool so overheating is not an issue. Forschner kitchen knives feature high-carbon stainless steel blades which are hand finished by Victorinox in Switzerland. A special tempering process produces an edge that can be resharpened again and again. All Victorinox handles are ergonomically designed to minimize wrist tension.

The Forschner Poultry Knife features a 4" blade with Victorinox blade etch. The handle is made from slip resistant black Fibrox.
