Boning Knife05/10/2020 ByLove Carbon Steel I never understood why people buy stainless steel knives and then can't keep them sharp because they are so hard. It's difficult to find a carbon steel knife these days but these Old Hickory knives are the exception. Nothing fancy but a quality knife at a great price. After honing the blade with a steel, I sanded the rough walnut handle to a smooth finish and oiled up the whole thing with vegetable oil blade and wood. Now it looks and feels like a knife that cost twice as much and works even better. Cuts a chicken brest in half with no effort and trims it up in seconds. Can't wait to get my next Old Hickory knife.

Old Hickory 6" Boning Knife07/21/2017 ByJohnnie Brown I love it! It keeps an edge and easy to sharpen. I have purchased other "modern" knives, but the Old Hickory is so much better for slicing and peeling for me.

Excellent Boning Knife!11/02/2015 ByKen Caracci With deer season beginning here in Texas next week, I needed a few more knives and I have relied on Old Hickory for many years. Take care of them, keep them dry and sharp, and they will provide you years of service. This boning knife is just an extra for use when someone shows up to help.
old time cook06/17/2015 Bycarmella thibodeaux I have been suffering through the years after Katrina with the so called knives that were being sold as top notch. Can't take it any longer. I am returning to the knives I used as a child and during most of my married life. Old Hickory. If they rust it is your fault, not the knives. I enjoyed slicing tomatoes, chopping veggies, and carving meat again. Thanks for handling the Old Hickory line.
