My dad was given one of these Uncles Henry's a long time ago and had sharpened it down to nothing, after purchasing over 2 dozen fillet knives, a friend said, "that's an Uncle Henry, go to knives plus. "I was so happy to find the knife i bought 2 of each and dad will get it on his birthday in a couples of day. The knife has a ridged spine, with just enough give to make it workable. The steel is great in that it will hold its edge for a looking time with minor hits on a steel or ceramic. Again this is after it had been sharpened well at first.
