I worked at a meat processing plant many years ago and all that was used was the Forschner and Victorinox knives. I dont have band sharpener like back then but these knives are second to none! I only stoned and steeled the knife and the tip will cut through paper towels held up off the roll with my left hand,,,be careful with these!
