Kershaw Knives: Kershaw Shun Ken Onion Chef's Knife, KE-DM500
The illustrated Kershaw Shun Knife is the Ken Onion Chef's Knife that features an 8.25" Damascus style blade made of 33 layer stainless steel. The Damascus style blade profile reduces sticking, resulting in less damage to food being cut and faster preparation times.
The blade steel of this Kershaw Shun Knife is fabricated from a core of VG-10 steel, which is hardened to a 60 Rockwell, and composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon, and Vanadium. The VG-10 core is clad with 16 layers of SUS410 high carbon stainless steel on each side, producing 33 layers of Damascus style steel. The finished forge welded product has been designated as Cobalt M.V. steel.
The ergonomic ebony black PakkaWood handle of this Kershaw Shun Knife has riveted 2/3 tang construction that extends the length of the two rivets, offers maximum comfort and control, and zero balance at the unique offset stainless steel bolster. The PakkaWood material provides strength, stability, and moisture resistance.
A bamboo wood stand is included with this Kershaw Shun Knife. The Kershaw Shun Ken Onion Chef's Knife has an overall length of 12.75" and weighs 9.2 ounces.
