The illustrated JA Henckels Knife set is the Professional S Steak Knife Set that includes four (31028-120) Steak Knives. Each of these Henckels knives features a 4 1/2" blade forged from Friodur ice hardened high carbon stainless steel, and full tang construction with a high impact black polypropylene handle that is triple riveted to the tang. The handle is contoured for comfort, and it comes with an integral forged bolster. Each JA Henckels Pro S Steak Knife has an overall length of 9". Made in Germany.
Why are Zwilling J.A. Henckels Professional S Kitchen Knives so good? There are three different steels bonded together to form the blade. The edge is formed from an extra hard steel to hold the edge, the back of the blade is formed from a flexible steel to withstand the stress of use, and the tang and handle piece are forged for extra strength where it is needed. Together, these three materials make one of the best kitchen knives available.
