The illustrated JA Henckels Knife set is the Professional S Eight Piece Block Set that includes a (31020-060) Paring/Boning Knife with 2 3/4" blade, a (31020-100) Paring/Utility Knife with 4" blade, a (31020-160) Utility/Sandwich Knife with 6" blade, a (31120-140) Santoku Knife with 5" hollow edge blade, a (31021-200) Chef's Knife with 8" blade, a sharpening steel with round 9" sharpening area, a pair of kitchen shears and a solid hard wood storage block. Each of the Henckels knives features a blade forged from Friodur ice hardened high carbon stainless steel, and full tang construction with a high impact black polypropylene handle that is triple riveted to the tang. The handle is contoured for comfort, and it comes with an integral forged bolster. The JA Henckels Professional S Eight Piece Block Set is made in Germany.

The edge is formed from an extra hard steel to hold the edge, the back of the blade is formed from a flexible steel to withstand the stress of use, and the tang and handle piece are forged for extra strength where it is needed.
