The illustrated Forschner Knife is the Forschner Bread Knife that features a 7" wavy blade made of high carbon stainless steel. The blade of this Forschner knife has the Victorinox logo etch. The Rosewood handle comes with polished aluminum rivets. This Forschner Bread Knife has an overall length of 11 1/2".
Forschner kitchen knives feature high-carbon stainless steel blades which are hand finished by Victorinox in Switzerland. A special tempering process produces an edge that can be resharpened again and again. All Victorinox handles are ergonomically designed to minimize wrist tension.
Wavy edges are especially useful for cutting soft products with a hard crust (bread) or tough skin (sausage, tomatoes). The teeth of a wavy edge allow greater pressure to be exerted on the object being cut and are generally thinner than a plain edge blade.
Editor's Note: Forschner Knives have been and continue to be manufactured by Victorinox in Switzerland. Recently, it has come to our attention that Victorinox no longer wishes to promote the name of Forschner. Neither the quality nor the value of the knives have changed. The only thing that has changed is the omitance of the name Forschner on the blade.
